In this tribute to the vegetable garden as a source of culinary inspiration, Yves Camdeborde—chef of Le Comptoir du Relais and a foundational figure in the bistronomy movement—travels across France to visit more than 25 chefs who integrate gardening into their cooking lives. Each shares reflections on their gardens, along with two recipes that reflect both place and season.
Among the contributors are some of the most respected names in contemporary French cuisine, including Alain Passard (Arpège), Glenn Viel (L'Oustau de Baumanière), Arnaud Donckele (La Vague d'Or), and Mauro Colagreco (Mirazur).
The resulting collection of dishes ranges from the rustic, like a Corsican soup of leeks, chard, red beans, and basil, to the refined, such as pike confit with celtuce and pink geranium.
