Jon Garcia left behind a career as an engineer to train as a baker and he brings meticulous analysis to the process of returning cheesecake’s focus to its namesake ingredient. More than half of his book is devoted to the dessert’s history and the qualities of cheeses used in producing the nearly forty recipes he provides, some of them shared by leading Spanish chefs such as Dani Garcia and Francis Paniego.
The recipes themselves range from his versions of an ancient Roman fresh curd and honey cheesecake to a New York-style and the recipe which began the Basque cheesecake mania. There are cakes made with smoked cheeses, blue cheeses, sheep cheese, and goat cheese. And an array of recipes offering flavors such as white chocolate and pistachio, carrot, coffee, dulce de leche, and orange marmalade.
