Bocuse, retrospective brings to a close the nine-year run of Bocuse Magazine, a publication produced by the chef’s namesake organization. Though not essential reading for understanding Paul Bocuse’s impact on modern gastronomy, this retrospective offers a broad look at the network of chefs, peers, and family members shaped by—and loyal to—his legacy.
Among its many features are profiles of those who have led the kitchens of Bocuse’s restaurants, interviews with chefs such as Marc Veyrat, and reflections from the family that continues to oversee his brand. The material is drawn from previous issues but includes additional commentary and photojournalism. A centerpiece of this edition is a feature on the opening of La Rotonde in Vichy, which the publisher positions as a continuation of Bocuse’s spirit in a new setting.
This is very much a work for collectors: a final installment that gathers the publication’s voices and materials into a single, commemorative volume.
