Very Good. Paperback.

Scottish cuisine isn’t terribly well-represented in cookbook publishing, so we can easily say we haven’t reached the heights of all the northern country has to offer. This sweet trio of books each makes a star out of a particular ingredient or technique strongly associated with Scotland or the UK at large: Black pudding, haggis, and smoked fish.

At 100 pages, or so, each book has a slew of ideas which may never have occurred to you before. Potato scones, monkfish paella, celeriac gratin, and kedgeree all serve as vehicles for black pudding. Haggis pizza, tacos, and lasagna are all new to us, too. And, in fact, many vegetarian haggis suggestions solidify the range of this often maligned delicacy. Smoked fish deepens the flavor of a spinach Spanish tortilla, pea risotto, or parsnip soup.

All are charmingly illustrated by Bob Dewar. As an added bonus, the smokie book is signed to food writer and editor Colman Andrews from whose personal collection they were acquired.
