Working from French and from French-influenced Russian and German models, these towering figures, such as Charles Ranhofer (Delmonico’s) and Louis Diat (The Ritz-Carlton), would occasionally introduce American ingredients and formulations but generally kept them within the framework of the grand style that defined the Gilded Age and beyond. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eVictor Hirtzler (1875–1931) was an exemplar of that generation. Born in Strasbourg, he apprenticed in Paris and worked for a time at the courts of the Russian Czar Nicholas II and Carlos I of Portugal. In the 1890s he arrived in the U.S. and in 1904 took over the new Hotel St. Francis in San Francisco. There he established one of the most elaborate menus anywhere in the American West. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eHirtzler’s cookbook, published in 1919 by the prestigious Hotel Monthly Press, proposed 365 days of breakfast, lunch, and dinner menus, containing, astonishingly, virtually no repetitions.
