The Ottolenghi Test Kitchen team, led by Noor Murad and Yotam Ottolenghi, develops recipes for the many Ottolenghi enterprises, including the London restaurants bearing the chef's name, as well as bestselling books and online courses.
In this, the first of series of books they hope to produce, the OTK team offers recipes built around pantry, fridge, and freezer staples: chickpeas cacio e pepe; cabbage and potato gratin with herbs and two cheeses; Cobb salad with mango and lime dressing.
To be frank, their ideas about pantry staples are more expansive that what we might find in our own kitchens. But we'll also note that the dishes for which Ottolenghi is famous are built on layers of flavor which cannot be obtained with onion and garlic alone. And one of the promises of an interesting cookbook is that it pushes you beyond those places which are already familiar.
If you're looking to move beyond the familiar, this is a strong choice.
